Ingredients

  • 1½ cups plain wholemeal flour
  • 1 teaspoon bicarb soda
  • ½ teaspoon baking powder
  • 1½ teaspoons cinnamon
  • 1¼ cups mixed dried fruit
  • 1 cup reduced fat vanilla yoghurt
  • 1 large egg
  • ¼ cup orange juice
  • 2 teaspoons olive oil
  • 2 teaspoons honey

Method

  1. Preheat oven to 180°C, line a 20cm x 30cm rectangular slice tin with greaseproof paper
  2. Place all dry ingredients in a large bowl, add dried fruit, mix to combine
  3. In a medium bowl combine yoghurt, egg, apple juice, oil and honey
  4. Make a well in centre of dry ingredients, add yoghurt mixture, stir until blended
  5. Pour batter into tin, smooth down
  6. Bake for 25-30 minutes or until cooked through and golden brown
  7. Cool before slicing, dust with icing sugar to serve.
