Chocolate wheat cookies

  • 4 wheat biscuits (e.g. Weet-Bix, Vita Brits)
  • ⅔ cup rolled oats
  • ¾ cup wholemeal plain flour
  • 100g brown sugar
  • 2 tablespoons cocoa
  • ⅔ cup dried apricots
  • 3 tablespoons margarine
  • 2 tablespoons golden syrup
  • 1 teaspoon bicarb soda
  • ¼ cup boiling water


  1. Preheat oven to 160°C
  2. Mix all dry ingredients together in a large bowl
  3. Place margarine and golden syrup in a small saucepan and heat gently until melted
  4. Mix bicarb and water together and pour into margarine mixture
  5. Add to dry ingredients and stir until combined
  6. Place tablespoons of mixture onto a oven tray lined with greaseproof paper
  7. Bake for 15- 20 minutes, leave to cool completely on tray
