English muffins – eight ways

English muffins are incredibly versatile and can be used with either sweet or savoury toppings. Try some of these:

Split each plain muffin in half and toast until golden

  1. Spread with reduced fat cream cheese, top with a slice of lean ham (amber)
  2. Spread with Vegemite, top with reduced fat cheese, grill till golden
  3. Spread with basil pesto (nut free recipe on the website), top with sliced tomato and grated parmesan cheese
  4. Spread with pizza sauce, top with grated cheese, grill until golden
  5. Top with poached egg, one slice of grilled lean bacon and tomato sauce (amber)

Split each fruit muffin in half and toast until golden

  1.  Spread with a thin layer of polyunsaturated margarine, top with sliced banana, sprinkle with cinnamon.
  2. Spread with a thin layer of thick reduced fat yoghurt, top with sliced strawberries and a dollop of yoghurt.
  3. Top with 2 tablespoons of pie apple/apricot or stewed fruit, add a dollop of your favourite yoghurt.
